A hearty, hot soup is just the thing in the cold season and warms you up nicely from the inside. The creamy potato soup in the Dutch oven can be made vegetarian or with bacon or sausages. So there is a recipe to suit every taste. What's more, the potato soup can be prepared in no time at all with just a few ingredients.

Preparation with briquettes Heat approx. 18-22 briquettes. Place 12-14 briquettes under the Dutch Oven and 6-8 briquettes on the lid.

Firstly, peel the potatoes and cut them into small cubes so that they cook faster.

Then peel the onions, celeriac and carrots from the greens and chop everything into cubes. Cut the leek into small rings.

Now all you have to do is chop the fresh parsley and you're ready to go.

Once half of the glowing briquettes are under the Dutch oven, add some butter and fry the onions until translucent. Then add the rest of the vegetables and fry everything briefly.

If you have decided to prepare the soup with bacon cubes, you should fry them before the onions and then put them to one side.

Now add the potatoes and deglaze everything with the vegetable stock. Now season everything well with salt and pepper, bring the stock to the boil and then put the lid on with the remaining briquettes. Leave everything to simmer for about 20 minutes with the lid on.

Once the vegetables are nice and soft, puree them. To do this, place the Dutch oven on the briquettes. Once the contents of the Dutch oven have been finely pureed, add the cream, nutmeg and, if necessary, a little salt and pepper.

If you opt for the version with Vienna sausages, add these cut into pieces so that they become warm.

Let everything simmer again for a few minutes. Then serve the soup in a deep dish with parsley and bacon, if desired.

If the soup ends up too thick, simply add a little water to thin it out. Garnish the potato soup with leek or parsley. The soup goes well with a tasty baguette or homemade bread from the Dutch oven.
