Have you ever heard of hay chicken? If not, now is the time to get to know this delicious Dutch oven recipe. The hay under the chicken ensures that it is really tender.

Preparation with briquettes Depending on the size, burn approx. 22-26 briquettes and place 7-9 under the Dutch Oven and 15-17 on the lid while cooking.

Moisten the hay with a little water beforehand. This makes the hay chicken particularly juicy, as the hay releases the moisture. Place the moist hay in the Dutch oven and then add the remaining ingredients.

Peel the onions and garlic cloves and chop both into small pieces. Wash and pick the thyme.

Wash the chicken thoroughly inside and out and pat it dry. Season the inside of the hay chicken with salt, pepper and BBQ rub. Then add the onions, garlic and thyme. Tie the chicken up with kitchen string.

Now brush the Dutch oven hay chicken with a little sunflower oil and rub it with BBQ rub and salt. Then place it in the centre of the pot.

Wash the potatoes thoroughly and place them in the cast iron pot next to the chicken.

Place the lid on the pan and leave the Dutch oven hay chicken to cook for around 1.5 hours.

At the end of the cooking time, you can cut the chicken and serve on plates with the potatoes.
